Bolt on butt joint or bolt on M+T joint is easy: http://www.cumpiano.com/Home/Articles/S ... block.html. M+T is easier if you prep the neck block before gluing to the body. You just need to make more jigs like this.

A dovetail can be cut with inexpensive hand tools, a saw and a chisel, it's easier if you haven't glued the fretboard to the neck yet.

The chisels must be extremely sharp, but you can do the whole procedure easily. If you have a problem fitting stuff you can shim and redo it until it's right.

I don't think fitting a dovetail can be done easily, even with extremely sharp chisels. beehive
It will NOT be easy the first time! I've only done one, so I don't know how many it takes before it can be done easily. bliss

You can shim and redo until it's right, I think I made 3 sets of shims before I got it close enough.
